Yes, all activities are being saved.
Firstly, on record level in the Details PDF under Remediation. See also question: 2.11 What is the Details PDF report for? This PDF will show the data contained in the record; a date/time stamp history of all analyst actions taken regarding the record.
Secondly the Audit Log under Reports will show all activities from all users, who has done what to which record and when.
